1 tsp oil
1 clove garlic
1/2 cup onion (diced)
1 tsp curry powder
180g chickpeas, cooked
1 cup diced tomatoes
1/4 cup water
1 cup green beans
1 cup cauliflower
100g natural low fat Yoghurt
1/2 to 1 cup cooked basmati rice
1. Heat oil and onion and garlic. Add curry powder and heat until aromatic.
2. Add chickpeas, tomato and water and simmer for approximately 15 to 20 minutes.
Add green beans and cauliflower and simmer for another 5 to 10 minutes.
Add more water if necessary.
3. Serve on basmati rice with yoghurt.
